Spicy Shrimp & Rice Casserole

This dish is full of flavor and is so easy to make. It came together in no time so it makes a good weeknight dinner paired with a salad, or something quick to make on a weekend. Don't let the spicy title fool you, it does have just a little heat but both of my girls ate this very well, they actually added some shredded cheese into theirs and they both had seconds. I think adding the cheese tones it down some.


Spicy Shrimp & Rice Casserole


 
What You Need:

1lb Shrimp, peeled, tail off (raw/cocktail/small/medium)

1 1/2 cup rice (uncooked)

3 tbsp. butter/margarine

1 can Cream of Chicken

1 can Cream of Celery

1 can Rotel

1 small Onion, chopped

1/2 Bell Pepper, chopped

Salt, Pepper, Garlic Powder to taste


Directions:

Preheat oven 350-375 degrees

In a large bowl combine shrimp, rice,

soups, Rotel, bell pepper, onion and season to taste.

Mix well

In a baking dish add in butter/margarine put into oven to melt butter

Remove from oven

Add in shrimp mixture over the melted butter

Cover w/ foil bake for 30 minutes

Remove and stir well

Cover and bake for additional 45 minutes, until rice is done

( Serve w/ shredded cheese optional)

Bacon Ranch Potatoes

This recipe only has 4 ingredients and really tasted good adding the bacon really made the difference. This pairs well with any main dish and would be great to take for a large gathering just add more potatoes, the recipe below feed my family and we all were able to get seconds. My kiddos added some BBQ sauce to dip theirs in and they loved them even more.


Bacon Ranch Potatoes



What You Need:

4 Potatoes, washed & cut into fourths

1 Packet Ranch Dressing, dry

5 Slices Bacon, cut up (raw)

Oil (olive or vegetable)

Season to taste Salt, Pepper, Garlic Powder-optional


Directions:

Preheat oven to 350-375 degrees

Spray medium/ large baking dish with non-stick spray, set aside

In a large mixing bowl

Add in cut potatoes mix with a little oil, mix well

Add in cut Bacon, mix

Add Ranch Dressing, mix well

Add Potato mixture to baking dish

Cover with foil bake 45 minutes

remove foil, stir potatoes

Bake uncovered for additional 30 minutes, or until potatoes are tender

I season my potatoes w/ salt/pepper/ garlic at this point right before serving

Serve hot!

 


This is what it looked like right before going into the oven, mix all the ingredients up, cover and bake.

Mango & Pineapple Salsa

I had to give this homemade salsa its on post, its that good. I made this the other night with my Fish Tacos and it was so good. We even had it on the side to eat with our chips for a new twist on chips and salsa.

Mango Pineapple Salsa


 
What You Need:

1-2 Mango, diced

1 Cup Pineapple Chunks or tidbits, diced

1/4 Purple Onion, chopped

1 Fresh Tomato, chopped

1 Fresh Lime, juice

Fresh Cilantro Leaves, chopped

Salt/ Pepper to taste


Directions:

In a large bowl, add in all ingredients, mix well

Cover and put in the fridge until ready to serve

I figured it would be easier to search and find recipes on this blog rather than just post them on my family one. But, if it starts to be too much for me to post on both I'll just go back to my family blog and post it all there.

Last Foodie Blog

I found the original recipe on Paula Deens website and just tweaked it a little bit.
This would make a easy weeknight dinner, so this is my version below.
It will not disappoint!!

Sausage and Rice Casserole

What You Need:
2 Cups of White Rice (I used 2 1/2 cups)

1 pound Breakfast Sausage (I used Owens)

1 small yellow onions, chopped
1 can cream of mushroom soup

4 tbsp {1/2 stick} butter/ margarine (melted-I used 5 tbsp)
Directions:
Preheat oven to 350-400 degrees
Cook rice according to directions (Boil water add rice until desired tenderness)
In a skillet over medium/high heat, cook sausage until done & drain.
Combine all ingredients EXCEPT butter & pour into casserole dish. Melt butter and pour evenly over top of mixture.
Bake until bubbly, about 25-30 minutes.

Sausage & Potato Soup

This soup was really good and filling, I got the orginal recipe off of Mix & Match Mama's food blog. I just tweeked it a bit for my taste.
Enjoy!
 
 
What you Need:

1 pound of sausage links, sliced (I used Eckrich)

                                                                  1 onion, chopped

5-7 Red skin potatoes, quartered

3 cups chicken Broth or Stock

1 can cream corn

1/4 cup milk

1 cup cheese, shredded (plus a little more for garnish)

Salt, Pepper & Garlic Powder (S&P)

Directions:

In your crock pot, place the sausage, onion and potatoes. Pour your broth/stock on top. Add your seasonings.
Cover and cook on low 6 to 8 hours or high 3 to 4 hours. Stirring occasionally

 
About 30 minutes before you're ready to serve, remove the lid and stir in your creamed corn, milk and cheese. Cover and continue to cook another 30 minutes on high.


When you're ready to serve, put soup into bowls and add a little more cheese on top.

Shrimp & Wild Rice Casserole

I made Shrimp Casserole for New Years this recipe is a for sure hit with everyone. It taste amazing and is so easy to make. I also featured it on my family blog as well.






What you Need:

  • 1 box (8oz) Wild Rice
  • 1 pound small/medium shrimp, peeled and deveined-tail off
  • 2 tablespoons  butter
  • 1/2 bell pepper, seeded and chopped
  • 1/2 onion, chopped
  • 1 can of Cream of  Mushroom soup
  • 2 cups shredded Cheese (I used Monterrey/ Colby)
  • Salt/ Pepper/ Garlic Powder (season to your taste)


  • Directions:

    Cook the rice according to package directions minus 1/4 cup water.
    Bring 2 cups water and 1/2 tablespoon salt to a boil in a medium saucepan and cook the shrimp for about 5-8 minutes.
     Drain immediately and set aside.
    Heat the butter in that same saucepan and saute the pepper and onion until soft, about 5 minutes.
    Preheat oven to 350 degrees.
    In a large bowl, combine the cooked rice, soup, 1 1/2 cups of cheese, shrimp and vegetables. Add salt and pepper, to taste. Mix well.
    Spray your casserole dish with vegetable spray ( I use melted butter).
     Place the mixture in the pan and top with remaining 1/2 cup cheese.
    Bake for 30 minutes, or until bubbly


    Step by Step:

    What you will need

    Cook Rice according to direction on package minus 1/4 cup of water

    Boil Shrimp



    Add all the cooked ingredients and about a handful of the cheese

    Mix well and season, to taste

    
    Top with remaining cheese and bake uncovered

    Cornbread Chili Casserole

     I found the original recipe over at Mommy's Kitchen. And, of course I tweaked it to my liking and it turned out great. I totally forgot to take pictures while I was preparing this, so I only got a few pictures of it once I took it out the oven.




    Cornbread Chili Casserole

    1 lb. ground Turkey, browned, (drained)
    ½ cup chopped onion
    1 can diced tomatoes (do not drain)
    2 (15 oz) cans of Beans of your Choice (I used Ranch Style and Kidney Beans (drained the kidney beans)
    approx ½ - tsp. Garlic powder
    approx 3 - tsp. chili powder (I suggest you season to your liking)
    approx ½ - tsp. garlic salt
    salt & pepper
    1 cup shredded cheese
    1/2 cup or a little less, additional cheddar cheese for batter (optional)
    2 - packages Jiffy Corn Muffin

    Mix Brown turkey meat with onion and season. Add Tomatoes, Beans and additional seasonings (opt.)
    Simmer for 15 minutes.

    Put into greased 9x13 pan and sprinkle cheese on top of meat. Mix corn bread mix according to box directions. (I added some cheese in the corn muffin mix before pouring it on top)

    Pour corn muffin mix on top of the chili and cheese cover completely. Bake at 400 degrees for 25 minutes or until golden brown.

    Mexican Chicken Bake

    This recipe was full of deliciousness, my whole family enjoyed it. It is fairly quick and easy to make-I found the original recipe over on Six Sisters Stuff, they called theirs Texas Ranch Chicken. For my recipe I just tweaked it a bit and made it my own.
     Only thing is the chicken I boil, season and shred my own chicken so that does take a bit of time. But, you could easily prep the chicken before hand or just do what I do. It's worth it, because the flavor is so much better when you boil it and season the chicken.



    What You Need:
    • 1 onion, diced
    • 1 green pepper, diced (opt.)
    • 1 red pepper, diced
    • 1 Tablespoon vegetable oil
    • 1 teaspoon minced garlic
    • 3 cups shredded cooked chicken breast (season w/ garlic powder, salt/pepper ect)
    • 1 can cream of celery soup
    • 1 can cream of chicken soup
    • 1 can Rotel, undrained
    • 1 Tablespoon chili powder
    • 12 Flour tortillas, cut into 1-inch long strips
    • 2 cups shredded Cheese (Colby/ Monterrey)
     
    Directions:
     
    1. Preheat oven to 350-400 degrees
     
    2. In a large skillet over medium heat, saute onion, peppers in oil until tender. Add garlic and saute for a few more minutes. Stir in chicken, soups, Rotel, and chili powder
     
    3. Line your baking pan with half of the tortilla strips. Top with half of the chicken mixture and 1 cup of cheese, then Repeat layers
     
    4. Bake uncovered for 30 minutes or until cheese is melted and bubbly.

    Hashbrown Casserole

    I've made this a lot and it is by far one of my kids favorite things. Its great because it can be a side dish or the main meal. And, it goes well with any meat and is great for any holiday side dish as well.

    Ingredients:

    20-36oz-Large bag of Hashbrowns (frozen or thawed)
    8oz-Sour Cream
    1 Can of Cream of Chicken
    1 Stick of Butter (Melted-I melt mine in my pan so it greases my pan & pour the melted butter in mixture.)
    1 1/2 cups shredded Cheese (about 2 hand fulls)

    Directions:

    In a large bowl mix together the Hash browns, sour cream, Cream of Chicken, melted butter, and about a hand full of cheese. Mix Well
    Pour/ Spoon your mixture into your butter greased pan and sprinkle the remainder of the cheese on top.
    Bake for 30-40 minutes at 350-400 degrees or until cheese starts to bubble and brown.

    Frito Pie Bake

    This was the perfect Saturday dinner for my family this past weekend. It was good and easy to make, and just right for a Saturday meal. Of course everyone already knows how to make Frito pie, but when I came across the original recipe over at Pearls, Handcuffs and Happy Hour (cute name huh?) it stood out to me because it included beans and required baking. I must say that next time I make this I won't bake the chips with it, something about that texture I didn't care for but the meat mixture was delicious both of my girls loved it, so next time I will just pour the meat mixture over the chips. I made it with ground Turkey instead of ground Beef, so if your using beef be sure to drain your meat.

    


    Frito Pie Bake

    1 lb. lean ground  Turkey (or beef)

    1 can pinto beans

    1 can tomato sauce

    1 can diced tomatoes

    1 pkg. taco seasoning {I used McCormick’s}

    1 cup shredded cheese

    3 1/2 cups Frito's

    1 1/4 cups sour cream


    First brown the meat (drain it if using beef), return it to the pan, and stir in the beans, tomato sauce, taco seasoning, and 1/4 (I used a hand full) cup of the cheese.
     
     
    Sprinkle 1 cup of the Frito’s on the bottom of a well greased 8x8 baking dish.
     
    Cover the Frito’s with the meat mixture.
     
    Bake at 350-400 for about 20 minutes and remove from oven. Now spread the sour cream over the meat mix and top with the remaining Frito’s and cheese.
     
    Return to oven and bake for another 5-10 minutes.  Cover with foil and return to bake. The cheese will get a little crispy on top of the Frito’s if you don't cover it- Bake, and remove! I topped ours with Sour Cream, Salsa and Jalapenos and a side dish of corn .

    Stuffed Peppers

    I made these for dinner Sunday night and they were so good!! I have tried different recipes for stuffed peppers, and they were just alright. But, this one I came up with and it is just about perfect and I can't say enough how delicious they were.

    Stuffed Peppers

    Ingredients:

    1 Pound Ground Turkey (or beef if using beef you will have to drain)
    4-5 Bell Peppers ( I used red, yellow & green )
    1 Can of Cream of Mushroom Soup
    1 small onion Chopped
    1 Cup cooked rice
    1 1/2 tsp of minced Garlic
    1/2 to 1 cup shredded Cheese (add a little extra for topping)
    Seasonings to your taste ( I used a little salt/pepper/ garlic powder)

    Directions:

    Preheat oven to 350-400 degrees
    Saute your chopped onions, and minced garlic until tender then add in your ground turkey and cook/brown until crumbly done (I boiled/ cooked my rice in a separate pot while the meat was browning).

    Then, add your Cream of Mushroom, cooked rice, and cheese- season & mix well

    Then you want to remove the tops of your peppers and remove the seeds. if you haven't already and then rub salt on the inside of the peppers, then place them in your baking dish.

    Now, you want to stuff the peppers almost to the top, spooning the mixture inside
    Bake at 350-400 for about 30- 45 minutes (until the peppers start to warp down).

    Remove from oven and top each pepper with cheese and then place them back in the oven for 5-8 minutes.
    Remove and Serve!!

     
    Step By Step:
     
    What you will need

    
    Cut tops, remove seeds and rub inside with salt

    
    Saute onion, garlic; then add in meat
     
    
    Mix onion, garlic, meat, cheese and rice (add your seasonings)


    
    Stuff with mixture, then bake and top with cheese

    Simple Tilapia

    My house is a lover of seafood and we all love fish. But, we normally only cook it one of 3 ways. So I'm always searching the net to find new ways to cook fish. I found this original recipe over at Pearls, Handcuffs and Happy Hour & its one of  Paula Deens original recipes . Its very simple and the ingredients are all things I had on hand, I did tweak the recipe just a bit to my families taste.


    Ingredients:
     
    4-6 tilapia fillets

    Salt, Pepper and Garlic Powder to taste (lightly)

    1 cup chopped onions

    1 green {or red} bell pepper, chopped

    1 stick butter, melted

    1 tbsp Worcestershire sauce (I used a tad bit more)

    1/2 cup grated Parmesan cheese ( I used a little less)
     
     
    Directions:
     
    Preheat oven to 350-400 degrees. Season the fish with salt/ pepper/ garlic powder. Spread the onions & pepper in a 13x9 baking dish and place the fish on top.
    Pour the butter on and then the Worcestershire sauce on the fish.
    Bake for 12-18 minutes {or until cooked through}. Remove pan from oven & sprinkle the fish with the Parmesan cheese. 
    Place bake in the oven for about 2-5 minutes or until cheese browns. 
    Remove and serve with peppers & onions on top of fish.
     
    I served rice and green beans with ours.
     
     
    Step By Step:
    What you will need

    Season the fish. Spread the onions & pepper in a 13x9 baking dish and place the fish on top.
    Pour the butter and then the Worcestershire sauce on the fish

    Bake for 12-18 minutes, or until cooked through. Remove from oven & sprinkle the fish with the Parmesan cheese. Place back in oven for about 2-5 minutes.

    Turkey Tenderloin

    I saw this what I call a Turkey Roast at the store the other day and decided I would give it a try. There really isn't much of  a recipe to make it, no ingredients as the tenderloin was already seasoned, once it got done I just poured some BBQ sauce over it and sliced it. This was a great value I think I only paid like $6 for it and it had 2 tenderloins inside. I paired it with baked potatoes and cabbage for an easy fulfilling week night dinner. This had to be one of the easiest dinner to prepare. And, best of all it was a healthy full dinner.



    Ingredients:
    Turkey Tenderloin
    BBQ (optional)

    Directions:
    Heat oven to 350-400 degrees, wrap your tenderloin in foil.  (This helped keep it juicy and tender)
    Bake for about 1 hour or until done, checking it ever so often to be sure you don't need to add water to it.
    Once, baked and tender enough to shred with a fork, pour a little BBQ sauce over it and bake for another 5 minutes and then serve.

    That's it, we had baked potatoes with ours, so I just wrapped my potatoes in foil and baked them in the oven at the same time as the tenderloin and they were both tender and done at the same time.

    Sweet Turkey Meatloaf

    I am a huge fan of Meatloaf, I always have been. My dad used to make a it growing up and to this day he still makes the best meatloaf I've ever had. I'm always on the search for different types of meatloaf and this one ranks in second place of my favorites that I've made. The pictures really don't do it justice.



    Sweet Turkey Meatloaf

    Ingredients:

  • 1 pound of ground turkey
  • 2 eggs (lightly beaten)
  • 1/4 Cup of Chopped Bell Pepper
  •  1/4 Cup of Ketchup
  • salt and pepper, to taste
  • 1 cup of oatmeal ( I used a few crushed crackers as well)
  • 1 can of tomato sauce ( I used a small can but you can use the 10oz can also)
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp brown sugar

  •  
    Directions:
     
    Stir your ground turkey, eggs, onion, oatmeal, ketchup, salt and pepper, ½ can of soup, and 1 Tablespoon of Worcestershire sauce -mix well.
    Put your meat into your loaf pan.
    In a separate bowl stir the brown sugar, 1 Tablespoon of Worcestershire sauce, and a ½ can of soup, mix well and pour over top of meatloaf.
    Bake at 350-400 degrees for about 90 minutes or until done.
     
    *I made a little extra sauce/ glaze to put on top, right before serving*

    Red Beans & Rice w/ Sausage


    This dish does not disappoint, I promise it is so good and filling. My family loved it, and it was also fairly quick and easy to make.

     
    Ingredients:

    1- package of Turkey Sausage (or you can use Smoked Sausage)
    2 tbsp. olive oil
    1/2-Chopped Onion
    1-can of Rotel
    1-can of Diced Tomatoes (Oregano/ Basil)
    1- can of Chicken Broth

    2 tsp. Seasonings (I used my normal salt/pepper/ garlic powder)

    1 & 1/2 cups cooked rice

    1-can light red kidney beans, rinsed & drained

    1-can dark red kidney beans, rinsed & drained


    

    Directions:
     
    
    Slice your sausage
    In a large skillet, add 2 tablespoons of olive oil and then toss in the sausage and onion. Cook over medium heat until browned. ( If using smoked sausage, you may need to drain).
    While the sausage is browning cook your rice, I boil mine until done/ tender.
    Then go ahead and drain and rinse your beans-and set them aside 
    Return the sausage back to the skillet after draining if you had to. Then add in the Rotel & Diced Tomatoes, and can of Chicken Broth and let that simmer over medium a bit (5-10 minutes).
    Then add in your beans, and Rice, mix well then add your seasonings.
    Simmer a bit more for about 10-18 minutes allowing the juice to cook down some.
    Done (I allowed mine to sit for about 5-8 minutes before serving, during that time I cooked biscuits in the oven.)

    Corn Casserole



    This Corn Casserole is a huge hit at my house with my girls. I must admit its pretty good to me as well. This makes a great side dish, for any dinner and is really easy to make.

    
    Ingredients:
    1  can whole kernel corn, drained
    1 can cream-style corn
    1 box of Jiffy Corn Muffin mix
    1/2 cup sour cream
    1/2 cup (1 stick) butter, melted
    1 - egg, beaten
    Pinch of Sugar

     
    Directions:
    Preheat oven to 350-400 degrees.
    In a large bowl, stir together both of corn, corn muffin mix, egg, sour cream, pinch of sugar and melted butter.
    Pour into a greased casserole dish. Bake for 45 minutes or until golden brown
     on top.

    Step by Step: 

    This is what you will need.

    In a large bowl mix both cans of corn

    
    Then stir in all the other ingredients and mix well. And then pour it into your butter greased pan and bake at 350-400 until browned at top and done.
