Stuffed Peppers

I made these for dinner Sunday night and they were so good!! I have tried different recipes for stuffed peppers, and they were just alright. But, this one I came up with and it is just about perfect and I can't say enough how delicious they were.

Stuffed Peppers

Ingredients:

1 Pound Ground Turkey (or beef if using beef you will have to drain)
4-5 Bell Peppers ( I used red, yellow & green )
1 Can of Cream of Mushroom Soup
1 small onion Chopped
1 Cup cooked rice
1 1/2 tsp of minced Garlic
1/2 to 1 cup shredded Cheese (add a little extra for topping)
Seasonings to your taste ( I used a little salt/pepper/ garlic powder)

Directions:

Preheat oven to 350-400 degrees
Saute your chopped onions, and minced garlic until tender then add in your ground turkey and cook/brown until crumbly done (I boiled/ cooked my rice in a separate pot while the meat was browning).

Then, add your Cream of Mushroom, cooked rice, and cheese- season & mix well

Then you want to remove the tops of your peppers and remove the seeds. if you haven't already and then rub salt on the inside of the peppers, then place them in your baking dish.

Now, you want to stuff the peppers almost to the top, spooning the mixture inside
Bake at 350-400 for about 30- 45 minutes (until the peppers start to warp down).

Remove from oven and top each pepper with cheese and then place them back in the oven for 5-8 minutes.
Remove and Serve!!

What you will need


Cut tops, remove seeds and rub inside with salt


Saute onion, garlic; then add in meat
 

Mix onion, garlic, meat, cheese and rice (add your seasonings)



Stuff with mixture, then bake and top with cheese

Simple Tilapia

My house is a lover of seafood and we all love fish. But, we normally only cook it one of 3 ways. So I'm always searching the net to find new ways to cook fish. I found this original recipe over at Pearls, Handcuffs and Happy Hour & its one of  Paula Deens original recipes . Its very simple and the ingredients are all things I had on hand, I did tweak the recipe just a bit to my families taste.


Ingredients:
 
4-6 tilapia fillets

Salt, Pepper and Garlic Powder to taste (lightly)

1 cup chopped onions

1 green {or red} bell pepper, chopped

1 stick butter, melted

1 tbsp Worcestershire sauce (I used a tad bit more)

1/2 cup grated Parmesan cheese ( I used a little less)
 
 
Directions:
 
Preheat oven to 350-400 degrees. Season the fish with salt/ pepper/ garlic powder. Spread the onions & pepper in a 13x9 baking dish and place the fish on top.
Pour the butter on and then the Worcestershire sauce on the fish.
Bake for 12-18 minutes {or until cooked through}. Remove pan from oven & sprinkle the fish with the Parmesan cheese. 
Place bake in the oven for about 2-5 minutes or until cheese browns. 
Remove and serve with peppers & onions on top of fish.
 
I served rice and green beans with ours.

Season the fish. Spread the onions & pepper in a 13x9 baking dish and place the fish on top.

Turkey Tenderloin

I saw this what I call a Turkey Roast at the store the other day and decided I would give it a try. There really isn't much of  a recipe to make it, no ingredients as the tenderloin was already seasoned, once it got done I just poured some BBQ sauce over it and sliced it. This was a great value I think I only paid like $6 for it and it had 2 tenderloins inside. I paired it with baked potatoes and cabbage for an easy fulfilling week night dinner. This had to be one of the easiest dinner to prepare. And, best of all it was a healthy full dinner.



Ingredients:
Turkey Tenderloin
BBQ (optional)

Directions:
Heat oven to 350-400 degrees, wrap your tenderloin in foil.  (This helped keep it juicy and tender)
Bake for about 1 hour or until done, checking it ever so often to be sure you don't need to add water to it.
Once, baked and tender enough to shred with a fork, pour a little BBQ sauce over it and bake for another 5 minutes and then serve.

That's it, we had baked potatoes with ours, so I just wrapped my potatoes in foil and baked them in the oven at the same time as the tenderloin and they were both tender and done at the same time.

Sweet Turkey Meatloaf

I am a huge fan of Meatloaf, I always have been. My dad used to make a it growing up and to this day he still makes the best meatloaf I've ever had. I'm always on the search for different types of meatloaf and this one ranks in second place of my favorites that I've made. The pictures really don't do it justice.



Sweet Turkey Meatloaf

Ingredients:

  • 1 pound of ground turkey
  • 2 eggs (lightly beaten)
  • 1/4 Cup of Chopped Bell Pepper
  •  1/4 Cup of Ketchup
  • salt and pepper, to taste
  • 1 cup of oatmeal ( I used a few crushed crackers as well)
  • 1 can of tomato sauce ( I used a small can but you can use the 10oz can also)
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp brown sugar

  •  
    Directions:
     
    Stir your ground turkey, eggs, onion, oatmeal, ketchup, salt and pepper, ½ can of soup, and 1 Tablespoon of Worcestershire sauce -mix well.
    Put your meat into your loaf pan.
    In a separate bowl stir the brown sugar, 1 Tablespoon of Worcestershire sauce, and a ½ can of soup, mix well and pour over top of meatloaf.
    Bake at 350-400 degrees for about 90 minutes or until done.
     
    *I made a little extra sauce/ glaze to put on top, right before serving*

    Red Beans & Rice w/ Sausage


    This dish does not disappoint, I promise it is so good and filling. My family loved it, and it was also fairly quick and easy to make.

     
    Ingredients:

    1- package of Turkey Sausage (or you can use Smoked Sausage)
    2 tbsp. olive oil
    1/2-Chopped Onion
    1-can of Rotel
    1-can of Diced Tomatoes (Oregano/ Basil)
    1- can of Chicken Broth

    2 tsp. Seasonings (I used my normal salt/pepper/ garlic powder)

    1 & 1/2 cups cooked rice

    1-can light red kidney beans, rinsed & drained

    1-can dark red kidney beans, rinsed & drained


    

    Directions:
     
    
    Slice your sausage
    In a large skillet, add 2 tablespoons of olive oil and then toss in the sausage and onion. Cook over medium heat until browned. ( If using smoked sausage, you may need to drain).
    While the sausage is browning cook your rice, I boil mine until done/ tender.
    Then go ahead and drain and rinse your beans-and set them aside 
    Return the sausage back to the skillet after draining if you had to. Then add in the Rotel & Diced Tomatoes, and can of Chicken Broth and let that simmer over medium a bit (5-10 minutes).
    Then add in your beans, and Rice, mix well then add your seasonings.
    Simmer a bit more for about 10-18 minutes allowing the juice to cook down some.
    Done (I allowed mine to sit for about 5-8 minutes before serving, during that time I cooked biscuits in the oven.)

    Corn Casserole



    This Corn Casserole is a huge hit at my house with my girls. I must admit its pretty good to me as well. This makes a great side dish, for any dinner and is really easy to make.

    
    Ingredients:
    1  can whole kernel corn, drained
    1 can cream-style corn
    1 box of Jiffy Corn Muffin mix
    1/2 cup sour cream
    1/2 cup (1 stick) butter, melted
    1 - egg, beaten
    Pinch of Sugar

     
    Directions:
    Preheat oven to 350-400 degrees.
    In a large bowl, stir together both of corn, corn muffin mix, egg, sour cream, pinch of sugar and melted butter.
    Pour into a greased casserole dish. Bake for 45 minutes or until golden brown
     on top.

    In a large bowl mix both cans of corn

    
    Then stir in all the other ingredients and mix well. And then pour it into your butter greased pan and bake at 350-400 until browned at top and done.

    Swiss Chicken



    I made this for Sunday dinner. I've made this many times before and its one of those feel good meals. I tend to stick to this recipe really no need to change it, the only thing I will try next time is to maybe mix the stuffing mixture with a little butter and add a bit of water to soften it some. Its very flavorful and it reminds me of Fall.


    Ingredients:
    6 skinless, boneless chicken breast halves or Skinless Thighs





    Directions:
    Preheat oven to 350-400 degrees. Lightly grease baking dish.
    Arrange chicken in the baking dish and lightly season. Place one slice of Swiss cheese on top of each chicken. (I usually tear them in half)
    In a seperate bowl combine the soups and milk in a medium bowl and stir well, and pour over chicken entirely.
    Then spread your crushed stuffing mix over the meat and soup mixture.
    Pour melted butter over top, and cover with foil.
    Bake 50 minutes, or until chicken is no longer pink and juices run clear

    Spread crushed Stuffing mix over meat/ mixture and then pour the melted butter over it.

    Turkey Enchiladas

    My household is a huge fan of enchiladas, my kids love the ones I normally make. I will do another post on my "renae's famous enchiladas" that are beef.
    This orginal recipe I saw online called for beef but in keeping with trying to ise ground turkey when I can I decided to tweak the recipe I found online and create Turkey Enchiladas.
    These were fairly good, and if you've ever made any kind of enchiladas then you know they are also fairly easy and quick to make. So here are my Turkey Enchiladas

     


    Ingredients:
    1 lb Ground Turkey
    1 small onion, chopped
    Pinch of Seasonings for your meat (garlic poweder/ Salt/Pepper to your taste)
    1 can of cream of mushroom soup
    1 can of Enchilada sauce
    8 oz of shredded cheese (use variety of choice)
    8-10 flour tortillas
     2-4 Dollips of Sour Cream
    Salsa

    Directions:
    Brown the meat then saute the onions in with it. Season with seasonings to taste. Once that is done, add in 3/4 of the cheese and mix it all together. Fill tortillas with the meat mixture and roll up.

    In a seperate pot combine the mushroom soup, 1 Dollip of Sour Cream and enchilada sauce and heat on low in a sauce pan until mixed well and pour on top of the rolled up enchiladas. Top with remaining cheese.
    Bake at 350-400 for 30-40 minutes or until cheese is nice and bubbly.

    Top with remaining Dollip of Sour Cream and serve with Salsa


    Step by Step:

    Ingredients

    Brown Meat until almost done, then add in your onions, and cheese

    
    Spoon Meat mixture into Tortillas and roll up seamside down, then in a pot warm mushroom soup, enchilada sauce & sour cream until well mixed and then pour over rolled up enchiladas.

    
    Serve with Sour Cream and Salsa, Done

    Snack Idea's : Oranges & Bananas

    I made these for my girls for a Halloween snack this year. It was real easy to make and healthy which was an added bonus.

    Pumpkins:
    (Oranges/ Tangerine's/ Clementines/ Cuties-mini oranges)
    Celery (optional)

    Directions:
    Peel the mini oranges and then stick a little piece of celery in the top for the stem.





    Mummies:
    Banana's
    1-5 Chocolate Cookies or Chocolate Morsels

    Directions:
    Peel banana's, then cut them in half and at the pointy ends of the banana's (as seen in my picture) break little pieces off of the cookie and lightly push them into the banana for eyes and mouth.

    Dirt Cake

    I made this particular Dirt Cake for Halloween you can read about it here just go to Halloween 2014.


    Ingredients:
    1 box Chocolate Cake Mix (eggs, oil, water)
    1 package of Oreo cookies, crushed (I used 2 sleeves of cookies)
    1 container of Cool Whip (let it thaw out some before using to make it easier to spread)
    1 box of Chocolate pudding (milk)

    Directions:
    Bake cake according to directions on box, let the cake cool and then poke a few holes in the cake
     Then, make the pudding according to directions, then pour the pudding over the entire cake, now spread the Cool Whip over the pudding (just use enough to cover the cake). Then, pour the crushed cookies over the top of the cake.

    Now, you can serve it immediately or you can refrigerate it for later.

    Chicken Alfredo


    I called this Ghost Pasta when I made it for Halloween dinner, you can see that post here.

    Ingredients:
    4-6 Chicken Breast ( cooked & Shredded- I season the chicken then boil it in water reserving about 1/2 cup of the broth,then shred or cut up the cooked seasoned chicken)
    Linguine or Fetticuine Pasta
    1 1/2 jars Prego Classic Alfredo Sauce
    Pinch of Salt/Pepper/ Seasoning Salt/ Garlic Powder (this gives it the flavor so be sure to season the chicken before boiling it)

    Directions:
    Boil your Pasta according to directions, drain-then add the 1/2 cup of chicken broth, then add your Alfredo Sauce and stir well
    Then Add your COOKED seasoned shredded chicken  and stir well.

    It doesn't get any easier than that-just add garlic bread.
